Chatpata palak gosht (spicy spinach with chicken)

Combining juicy chicken with vibrant and fresh spinach, chatpata palak gosht is a nutritious dish that delights the taste buds. Packing plenty of iron and protein, and providing a perfect balance of taste and flavour, it’s a great option for diabetics and non-diabetics alike.

Serving size: 1 bowl (270g)

Ingredients

  • Boneless fat-free chicken, 250g, cut into bite-sized cubes
  • Spinach, 3 cups, washed and chopped
  • 1 small onion, sliced
  • 1 ripe tomato, pureed
  • Fresh lime juice, 1 tsp
  • Cayenne pepper, 1 tsp
  • Garlic paste, ½ tsp
  • Cumin powder, ½ tsp
  • Ginger paste, ¼ tsp
  • Ground coriander, ¼ tsp
  • Turmeric powder, ⅛ tsp
  • Salt to taste
  • Fresh coriander leaves for garnish
  • Olive oil for cooking

Method

  1. Heat oil in a pan at medium heat. Add the sliced onions and fry until golden brown.
  2. Add garlic and ginger pastes, and sauté for a few seconds.
  3. Add cumin powder, cayenne pepper, coriander, turmeric and salt. Sauté for 5-7 seconds
  4. Next, add tomato puree, cover with the lid, and simmer for about 5 minutes (till the mixture releases oil at the corners).
  5. Remove the lid, add the chicken cubes and sauté over medium heat, stirring constantly, for 5 minutes.
  6. Reduce the heat to low, cover again with the lid, and cook for a further 10 minutes (or until the chicken is tender and cooked through).
  7. Add the spinach and lime juice, mixing well. Cover again with the lid, increase the heat to medium, and cook for 5-7 minutes (till the spinach is cooked).
  8. Once the spinach is cooked, transfer the mixture from the pan to a serving dish and garnish with coriander.
