Chatpata palak gosht (spicy spinach with chicken)

Ingredients
- Boneless fat-free chicken, 250g, cut into bite-sized cubes
- Spinach, 3 cups, washed and chopped
- 1 small onion, sliced
- 1 ripe tomato, pureed
- Fresh lime juice, 1 tsp
- Cayenne pepper, 1 tsp
- Garlic paste, ½ tsp
- Cumin powder, ½ tsp
- Ginger paste, ¼ tsp
- Ground coriander, ¼ tsp
- Turmeric powder, ⅛ tsp
- Salt to taste
- Fresh coriander leaves for garnish
- Olive oil for cooking
Method
- Heat oil in a pan at medium heat. Add the sliced onions and fry until golden brown.
- Add garlic and ginger pastes, and sauté for a few seconds.
- Add cumin powder, cayenne pepper, coriander, turmeric and salt. Sauté for 5-7 seconds
- Next, add tomato puree, cover with the lid, and simmer for about 5 minutes (till the mixture releases oil at the corners).
- Remove the lid, add the chicken cubes and sauté over medium heat, stirring constantly, for 5 minutes.
- Reduce the heat to low, cover again with the lid, and cook for a further 10 minutes (or until the chicken is tender and cooked through).
- Add the spinach and lime juice, mixing well. Cover again with the lid, increase the heat to medium, and cook for 5-7 minutes (till the spinach is cooked).
- Once the spinach is cooked, transfer the mixture from the pan to a serving dish and garnish with coriander.
