With delightful Indian flavours and aromas, this carrot halwa is a treat for diabetics and non-diabetics alike. Healthy, heavenly, and requiring just a few simple ingredients, you can prepare this exceptional dessert in minutes.

Serving size: 1 bowl (219g)

Ingredients

  • 2 carrots, peeled and grated
  • Non-fat milk, 1 cup
  • Crushed almonds, ¼ cup
  • 2 green cardamom pods, crushed and ground
  • Raisins, 1½ tbsp
  • Unsalted light butter or ghee, 1 tbsp
  • Stevia, 1 tbsp

Method

  1. Heat the butter or ghee in a pan on medium heat, add the cardamoms, and fry until aromatic. Then add the carrots and sauté for 5-7 minutes.
  2. Add the milk and half of the almonds and raisins. Stir constantly to avoid burning at the bottom, and cook for about 5-7 more minutes.
  3. Add the stevia and keep stirring. Lower the heat to medium-low, and cook until the halwa thickens.
  4. Once the halwa has thickened, remove from the heat, transfer to a serving bowl, and garnish with the remaining almonds and raisins.
